CARROT CHUTNEY


Hi Everyone,

I have participated in a contest in facebook yesterday and even though I know Iam not a big chef to compete in a worldwide contest but still I participated J .. I may or may not win a prize but Iam so happy to see many people gave me good comments and I even got 450 likes , But I was wondering how people could cook like this as I saw many people has posted so many amazing recipes and wonderfully plated!! They are great.Anyway Iam so curious about results which they will announce tomorrow ( Iam sure I wont win J).

Lets come to today's recipe! Today's recipe is going to be CARROT CHUTNEY.

I know it is very simple recipe but there are so many versions in making vegetables chutney and this is the one which we are following for so many years and yummy too.


Lets review the recipe,
SERVINGS : 2 nos.
INGREDIENTS :

Carrot – 4 medium sized.

Green chilli – 1 no.

Urad dal – 1 tsp

Channa dal – 1 tsp.

Curry leaves – a sprig

Tamarind – 1” piece.

Salt – as required.

Oil – 3 tsp.

PREPARATION :

1) Grate the carrot , cut green chillies roughly.

2) In a kadai add 2 tsp of oil ,when oil gets heated add the grated carrot and fry in medium flame till the carrot turns pale and raw smell leaves (It may take 10 mins).

3) Once done empty the fried carrot in a plate and in the same pan add 1 tsp of oil , followed by Green chilles and saute till it turns colour.


4) Now add urad dal and channa dal , curry leaves and saute till the dals turns to golden brown colour.

5) Once done in a blender add all the fried ingredients along with tamarind and salt and grind to fine paste with little water.


6) Empty the content in your serving bowl and serve for idli , dosa and even for chapatis.
NOTES :

1) You can even chop the carrot to small pieces and fry but grating helps to fry the carrot quickly and saves time.

2) Adjust green chillies according to your spice level.

3) Be generous in adding channa dal and urad dal as it gives nice flavour and taste.
4)  Four carrots yields about 1 1/2  cup grated carrot.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
