CARROT , BEANS PORIYAL / STIR FRY

CARROT BEANS PORIYAL!! This is the first poriyal / stir fry recipe in my blog.I never thought of posting stir fry recipes in my blog as I feel everyone knows it until when my neighbours asked me how I make poriyal without mushy , retaining the bright colours of vegs.
Then I decided to post my poriyal recipes too.So here comes my first poriyal recipe Carrot , Beans poriyal.
This poriyal is like template , you can add any number of Vegs in this poriyal ..like cabbage , potato.
The recipe is so simple that every south Indian family knows it very well...still this post may help beginners.

The recipe is as below,

INGREDIENTS :
Carrot – 1 cup ( chopped).
Beans – 1 cup (chopped).
Turmeric powder – 1/4 tsp.
Chilli powder – 1 1/2 tsp.
Salt – as required.
Onions – 1 no ( big – medium sized).
Coconut – 1/8 cup ( grated).
Curry leaves – a sprig.
Channa dal – 1/2 tsp.
Urad dal – 1/2 tsp.
Mustard – 1/4 tsp.
Oil – 1 tsp.


METHOD :
  1. Wash and chop carrot and beans to small pieces.Chop onions to small bits.
  2. In a wide pan boil 1/4 cup water , when water comes to boiling point add the chopped vegs,salt,chilli powder,turmeric powder , close the pan and cook for 10 mins till the vegs cook soft.

  3. In the mean time heat oil in a small pan , add mustard , channa dal , urad dal , curry leaves,onions and fry till onions turns translucent.Finally add coconut and mix for 30 seconds , switch off the flame.

  4. Add the fried ingredients to boiled vegs and give a 2 minute mix . Remove from flame and serve hot with hot rice.


NOTES :
  1. Always add vegs only in boiling water , this will reduce the boiling time and also fuel consumption.
  2. If you are packing the poriyal for lunch ,you need to fry coconut slightly (as raw coconut will start spoiling after 4 hours of cooking ) so fry them along with onions . Else if for immediate consumption you can add coconut at final stage without frying.
