EASY CHOCOLATE SAUCE

Hi All,

When it comes to some fancy dishes or desserts , certainly we move to some fancy restaurants to enjoy it.
But many of the chocolatey desserts are easy to make in home . The ingredients used there are easily available in super markets itself . So always try it in home before before going to restaurants. This is what I advise to all my friends ( so many friends think i have no work other than cooking :( ) .

Such one such exotic dessert garnishing dish is Chocolate sauce . I remember when I was working we friends use to visit a Ice cream parlour in Coimbatore only to taste the ice cream with chocolate sauce ,they charge double bcoz they have many varieties of sauces.
Now I make my own chocolate sauce which is far far better than store brought ones. I made this sauce to decorate my mousse and also blackforest cake.
The ingredients are very simple and preparation time is within 5 mins.. very very easy recipe.

Happily sharing the recipe with you also,

INGREDIENTS :
Cocoa powder – 1/4 cup ( 30 gms).
Sugar – 1/4 cup ( 55 gms).
Water or milk. – 100 ml (less than 1/2 cup)
Butter – 1 1/2 tsp ( 10 gms).
Vanilla essence – 3 drops.

METHOD :
  1. In a pan add water or boiled milk , sugar and boil till sugar dissolves.
  2. Now add cocoa powder and mix till it mixes well and turns little creamy.

  3. Remove from flame and add butter and mix.
  4. That's all!! Refrigerate and use when required.
  5. You can serve it with icecreams, fruit salads , cakes ,mousse , cake pops or even pour over idli and dosa to surprise your kids with chocolate idli , chocolate dosa.I poured over Marie biscuits and my daughter enjoyed it.

NOTES :
    1) When refrigerated the sauce will turn little thick you can re-heat a little and use.
    2) You can use water or milk , using water will give you very liquidy watery sauce , milk will give little thick sauce.I used milk .
    3) Use good quality cocoa powder to get fantastic results.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
