BABY CORN FINGERS..

Hi Everyone,

Sudden rules in India..500 Rupees and 1000 rupees are no more valid!! Bank holiday , long queue in ATM!! OMG!!! Its like we have money but can't use it :))..Today morning it was so nice that my husband was pleading me for 100 rupee ..woooww...what a wonderful situation : )).
Today is Arun's birthday ,so I planned for black forest cake .As he wants to take it to his office colleagues too I baked a bigger cake and after lot of struggle I baked,frosted and packed too.Final mission was successfully accomplished.I will share the recipe in a couple of days.
Now coming back to today recipe , I brought a packet of Baby corn last week during my parent's visit but somehow in refrigerator it was pushed behind vegetables and I totally forgot about it.Now when my parents left I saw it was hiding there.Arun will not eat corn so I want to make something spicy that my daughter should enjoy and made this finger chips.The chips are crunchy , spicy and wonderful that even Arun loved it , Project success.

The recipe is as below,

INGREDIENTS :
Baby corn - 1 packet ( 100 gms).
All purpose flour / Maida – 2 tsp.
Bajji mix or besan flour – 2 tsp .
Chilli powder – 1 1/2 tsp.
Cornflour mix – 1 tsp.
Rice flour – 1 tsp.
Salt – 1/2 tsp.
Water / lime juice /curd – 2 tsp ( or as required)
Oil – for deep frying.


METHOD :

  1. Cut baby corn to thin stripes ( may be into 4 or 2 depending of the size).
  2. In a wide bowl add corn , maida , bajji mix , chilli powder , cornflour , rice flour , salt and mix well , add water or curd or lime little by little to moist the mixture so that the mixture sticks to corn well.


  3. Mix evenly that the corn should be covered with masala well.
     
  4. Let the marinated corn rest for 1 hour ( or minimum 30 mins).
  5. In a wide kadai heat oil and deep fry the corn batch by batch.
  6. Drain the oil and serve hot.

NOTES :

  1. If you are using besan flour instead of bajji mix , then pls add 1 pinch of asafoetida and increase chilli powder also.
  2. As I didn't have curd and lime I added only 3 tsp of water only . If you have curd or lime add little by little else the chips will be very sour.
