COCONUT KOVA BURFI ( WITH OPOS SUGAR SYRUP)

Hi All,

COCONUT BURFI!! When I was conceive I carved for Coconut Burfi so much, but my mum doesn't know to make coconut burfi and when I requested my Aunt she prepared Adirasam :( instead of coconut burfi ! So my entire pregnancy period I spent in coconut burfi carving.
I never thought of making this burfi in home bcoz Iam not confident about my sugar syrup consistency , so I stayed from it all these days.
After knowing about OPOS sugar syrup and inspired by Facebook best friend Ms.Nishu , I got little confident and tried coconut burfi for this diwali.For my surprise the burfi came exactly like traditional burfi! Soft , chewy and aromatic . For a little twist I added few tablespoons of unsweetened Khova.

INGREDIENTS :
Coconut grated - 1 cup.
Sugar – 2/3 cup.
Cardamon / Elaichi – 2 nos.
Cashews , Almond and Pista – 4 tsp ( chopped for garnishing).
Water – 1/3 cup.
Unsweetened kova – 3 tablespoon ( optional)

METHOD : 

  1. In 3 ltrs pressure cooker add sugar, water , peeled cardamon and heat in high flame for 6 whistles.

  2. Immediately release the pressure and open the cooker , add grated coconut and mix well.

  3. If the mixture looks too watery cook in open pot for few more mins until the mixture forms a ball consistency.

  4. When the mixture starts thickening add koya and keep mixing.


  5. When reached thick ball consistency remove from flame and spread it in a greased plate.

  6. Garnish with chopped nuts and press slightly so that the nuts will stick to burfi.
  7. Let the burfi remain undisturbed for 30 mins or till it reaches room temperature.
  8. Cut it with knife and enjoy the soft , chewy burfis.

NOTES :
  1. If you are cooking in open pan , boil sugar syrup until one string consistency and add coconut , but make sure when the syrup reaches string consistency immediately add the coconut.
  2. Add only the white part of coconut don't add brown part.
  3. Khoya is optional , you can even skip it.Adding khoya gives nice texture and fantastic aroma.
