BRIYANI!!
Who hates briyani? ! Everyone loves it..Especially our family is full
of briyani addicts.My husband can eat briyani for his whole life time
and will not get bored.
I
made this soyachunks briyani last week for dinner...Suddenly we got
carvings for spicy dinner so after so many discussion
finally we mutually settled for soyachunks briyani :)
Making
briyani is is so easy ..All you need is little patience and love for
cooking,then your briyani will come out awesome.
Soyachunks
is a boon for vegetarians,as it contains lot and lots of proteins
which is essential for each and everyone.
So
make your healthy food more spicy and yummy with the below recipe,
SERVINGS
: 4 members.
INGREDIENTS
:
Soya
Chunks / Meal maker – 2 cups.
Onion
– 1 no (big)
Tomato
– 1 no ( medium sized).
Green
chillies – 2 nos.
Bay
leaf – 1 no.
Star
anise – 1 no.
Black
stone flower – 1/4 tsp.
Marati
mokku – 2 nos.
Javithri
/ mace – 1 no.
Zeera
samba rice or Basmathi rice – 2 cups.
Turmeric
powder – 1/4 tsp.
Chilli
powder – 1 tsp.
Briyani
masala powder – 1 tsp ( optional).
Coriander
leaves – 1 bunch.
Mint
leaves – 1 bunch.
Lemon
juice – 1 tsp.
Ghee
– 3 tsp.
Oil
– 4 tsp.
FOR
BRIYANI MASALA :
Onions
– 1/2 cup ( small / pearl).
Garlic
– 10 pods.
Ginger
– 1.5” piece – 1 no.
Cinnamon
– 1” piece – 2 no.
Cloves
– 5 nos.
Curry
leaves – a sprig.
Nutmeg
– a peanut sized piece.
METHOD
:
- Chop onions length wise , cut tomatoes to small pieces ,slit green chillies length wise. Clean and chop coriander leaves and mint leaves.
- Grind biryani masala ingredients to fine paste.
- Wash rice with running water thrice and soak for 10 mins ,after 10 mins drain the water and keep aside till use.
- Heat 4 cups of water in a wide vessel and when water reaches boiling temperature add 1 tsp salt , soya chunks and boil for a minute.Now switch off the flame and keep the vessel closed for 10 mins.
- After 10 mins drain the water and wash the boiled soya with cold water twice,using your hand squeeze the water completely and keep the soya aside till use.
- Heat oil ,1 tsp ghee in pressure cooker and add whole spices ( bay leaf , star anise ,javithri,black stone flower , marati mokku) ,fry in low flame till nice aroma generates.
- Add green chillies,onions and fry till golden brown.
- Then add coriander leaves and mint leaves and fry till they shrinks.Now add tomatoes and saute till mushy.
- Add spice powders ( turmeric powder , chilli powder , briyani masala powder ) and fry for a minute.
- Now add ground masala ,saute till raw smell leaves and masala truns to dark colour and thick.Add soya chunks and give a quick mix.
- Add drained rice, 3 cups of water ,salt ,a tsp of ghee ,close the pan and cook for 2 whistles in medium flame( pls refer notes section..it may help you)
- After 2 whistles remove from flame and let the pressure subsides by itself (it takes about 20 mins).
- Open the cooker and add lime juice , 1 tsp ghee and mix well.
- Serve hot with Raita or your favorite side dish,I served with Raita and Egg masal.
NOTES:
- You can use Zeera samba or Basmathi rice of your choice,I used Zeera samba rice.
- Adjust water level according to rice quality,average water ratio is 1 cup rice to 1.5 cup water (1:1.5) , you can even increase water to 2 cups.
- Number of whistles also depends on rice , in Chennai I leave for one whistle but in Bangalore I cook for 3 whistles.So for first time you cook for 2 whistles and check,if rice looks too grainy cook for 1 more whistle.If rice looks mushy reduce to 1 whistle next time.
- If rice over cooked and turned mushy , immediately transfer to a wide bowl and spread it widely and leave it undisturbed for 20 mins,this will help to reduce stickiness.
