SPICY WHEAT CHIPS ( BAKED AND DEEP FRIED)

Hi All,

WHEAT CHIPS!! I always want to bake healthy dishes with oven but we people are addicted to All purpose flour and our taste buds unaccept anything else so I rarely try anything without maida..My husband was persisting me to bake something spicy instead of cake and cookies,so I tried this wheat chips.
Inspired by Ms.Deeksha Pathak's WHEAT CRACKERS post in Ovenderful Mom Bakers Community I made this wheat chips..But I altered the recipe according to south Indian taste like our Pakoda.
I can surely say this is one of the healthy snack which you can give to your kids without any guilt.
As I want it to be very healthy I baked in oven but you can even deep fry in oil ( refer notes).

The recipe is as below,

INGREDIENTS :
Wheat flour – 1 cup.
Rice flour – 1/8 cup.
White rava / Sooji or Chiroti rava – 1/4 cup.
Baking powder – 1/2 tsp.
Salt – as required.
Red chilli powder – 1 tsp.
Unsalted butter (chilled) – 1/2 cup.
Milk ( chilled) – 1/4 cup ( or as required to form dough).
Sesame seeds / Ellu – 1/4 tsp.
Ajwain / Omam – 1/4 tsp.
Cumin / Zeera – 1/2 tsp.
Curry leaves – 4 to 5 leaves ( chopped finely).
Coriander leaves – 3 tsp ( chopped finely).
Oil – for deep frying ( in case you are not baking in oven).


PREPARATION :
  1. In a bowl add wheat flour , rice flour , rava , baking powder , Chiili powder , salt ,curry leaves , coriander leaves ,ajwain , sesame and mix evenly.
  2. Now add chilled butter and mix it with hands till they form like bread crumbs( as in picture).
  3. Add chilled milk little by little and mix well to form soft dough ( the dough must be soft and should not stick to the bowl) . Refrigerate the dough for 30 mins for the flavours to set.
  4. Now remove from fridge and make medium sized balls out of dough.
  5. Place the dough in between parchment paper or in between big polysheet ,using your roller flatten the dough to thin sheet ( thin enough like pooris).
  6. Cut to required shape as per your wish ( I used my daughters clay mould to make fish and star shapes).
  7. Else using your knife make diamond cuts.
  8. Pre-heat your oven 180” to 15 mins.
  9. Arrange the shaped pieces  in a baking tray and bake for 15 mins.
  10. Instead of baking you can also deep fry in oil in a wide kadai.
    DEEP FRIED CHIPS

  11. Remove from oven and enjoy once the chips reaches room temperature.

NOTES :
  1. I used Chiroti rava .. it is nothing but finer texture of our sooji , In case you are using sooji just pulse it for 2 seconds in your blender.
  2. Don't change the ratios , pls follow the above to get perfect crispy chips.
  3. If you are not using oven , you can deep fry in oil . Heat oil in a wide kadai and once oil reaches hot ,simmer the heat and drop the chips and fry for 2 mins.when chips puffed up and turned golden brown increase the heat and fry for 1 more minute.By this way you will get crispy chips.
  4. 15 mins of baking is enough even for thicker chips , in case of very thin chips 10 mins is enough.you can remove from oven once they chips start turning brown.
  5. Original recipe states to add kasori methi , you can add if required.

WARM WATER CHAPATI / BEGINNER GUIDE FOR SOFT CHAPATI
