GARLIC RASAM

Hi,
Though I make a few varieties of rasam ,this garlic rasam and pepper rasam are medicine rasam in our home.Whatever health problems we face ,right from indigestion to cold and fever ,immediately I will make these rasam in our home.These rasam not only tastes amazing but also cures most of digestion problems and also helps in recovering from flu too.
The simple garlic rasam recipe is as below,

INGREDIENTS :
Garlic – 15 pods.
Tamarind – 2” balls size - 1 no.
Curry leaves - a sprig.
Salt – as required.
Coriander leaves – a handful.
Dry red chillies – 1 no.
Coconut oil or ghee – 1 tsp.
Asafoetida – 1/8 tsp.
Tomato – 1 no ( medium sized).
Mustard – 1/4 tsp.
Cumin – 1/4 tsp.

TO GRIND :
Garlic – 5 pods.
Pepper – 1 tsp.
Turmeric powder – 1/4 tsp.
Channa dal – 1 tsp.
Cumin – 1/2 tsp.
Coriander seeds – 1 tsp.
Dry red chillies – 2 nos.
Ghee or coconut oil – 1 tsp.


METHOD :
  1. Soak tamarind in warm water for 10 mins and extract juice , discard the pulp.
  2. Grind tomatoes to very coarse bit or even you can chop them very finely ( grinding to coarse paste works better).Same way crush garlic to coarse bits.
  3. In a small pan heat oil or ghee and add our grinding ingredients and fry in low heat till aroma comes , remove from heat and grind to coarse paste.
  4. Heat oil or ghee in a shallow vessel and add mustard , when mustard starts spluttering add cumin ,curry leaves and saute till brown.
  5. Add crushed garlic and saute till golden brown.
  6. Then add tamarind water , crushed tomatoes , asafoetida ,ground masala ,salt and boil till high flame for 5 mins.
  7. When rasam starts bubbling , add coriander leaves and and remove from flame.
  8. Serve hot with rice.
