NIMBU PANI / SHIKANJVI

Hi All,
Its hot summer ..hot hot and too hot..Iam wondering if Bangalore has such a high heat then what about other parts of India!! Food intake was gradually reduced in our home and everyone prefers for summer drinks and fruits 😁 ..So my refrigerator is full of fruits and drinks stuffs.
I make this nimbu pani in full batch and refrigerate , so everyday each takes a full glass .It is really very very refreshing and lemon is very good for health and beats summer heat.I added sabja / falooda seeds with nimbu pani , but if you can even skip it.But don't skip any other ingredient as each and every ingredient gives flavour to this drink.
Try this nimbu pani and enjoy bright summer..

INGREDIENTS :
Water – 3 cups.
Lemon – 2 nos.
Sugar – 7 tsp.
Rock salt – 1/4 tsp.
Pepper powder – 1/4 tsp.
Cumin – 1/4 tsp.
Mint leaves – few ( for garnishing).
Sabja seeds / falooda seeds – 1/4 tsp.

METHOD : 
  1. Dry roast cumin seeds and grind to fine powder.
  2. Soak sabja seeds in 1/8 cup if water for 15 mins , after 15 mins the seeds will be puffed like jelly.
  3. In a bowl add water , sugar and mix till sugar dissolves.
  4. Then add lemon juice , pepper powder, salt , cumin powder and mix well.
  5. If you have time you can refrigerate the drink for 30 mins as the taste to blend with each other well.
  6. After 30 mins of refrigeration , filter the drink in serving glass , top with sabja seeds and mint leaves and serve chilled.
    NOTES :
  1. Try to make with fresh ground cumin powder to give fantastic aroma and real refreshing feeling.

  2. Sabja seeds is optional but I suggest you to add if possible as sabja seeds are cooling agent ,helps to reduce heat ,also low in calories ,helps to control blood sugar level and weight loss too.
  3. You can refrigerate the drink for a day or two.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
