HOME MADE GINGER ,BASIL TOFFEE (COUGH TABLET)

Hi,
HOLY BASIL , GINGER COUGH TABLETS!! I have tasted this tablet during my childhood days in nearby petty shop.Those days I hate this toffee but sometimes I was forced by our family to eat this.
Later When I started loving this toffee , petty shops reduced and this toffee also slowly disappeared :(
Recently I came across a video showing home made cough tablets , I immediately remembered my childhood days and wanted to try it. But this time I added holy basil leaves too while making this toffee.The toffee was really nice and it was a great remedy for cough.
The recipe is as below,

INGREDIENTS :
Ginger – about 4” piece – 1 no.
Sugar - 1 cup.
Holy basil leaves / Thulasi – 1/2 cup.
Sugar – 1 cup
Honey – 3 tsp.
Cloves powder -1/4 tsp.
Lemon juice – 1 tsp.
Sugar powder – few tsp for sprinkling.
Water – 1 cup.



METHOD : 
  1. Scrap the skin of ginger and grind it well.
  2. In a pan add crushed ginger , sugar , basil leaves,cloves powder ,water ,honey ,lemon juice and start boiling at high temperature.

  3. Boil for 5 mins till the mixture starts caramelizing , when the mixture turns dark coloured ,sticky syrup , remove from flame.
  4. In a butter paper or parchment paper ,sprinkle sugar powder and then drop sugar syrup as coin sized drops ,sprinkle sugar powder and let the tablets dry for about 6 hours or overnight ( you can even refrigerate them).
  5. When tablets become hard and dry , sprinkle few more sugar powder on top of tablets and store in airtight container.
  6. When refrigerated the tablet stays good even for a month.

    NOTE : 
    1) As I dont have parchement paper I used my silicon moulds.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
