BANANA BREAD

Hi All,
EGGLESS BANANA BREAD! When life gives you with over ripe banana then make it into simple banana bread with wheat flour , apf combination.My daughter loves Banana but she does not like overripe bananas and few weeks before two bananas were lying in my pantry and no one was ready to eat it.So I left two more days for it to over ripe and then I made this banana bread.
The bread was so soft and yummy with banana flavour and everyone liked it so much.
I made it combination of wheat flour and all purpose flour ,you can make it with whole wheat flour too.

YIELDS :11 slices.

INGREDIENTS :
Whole wheat flour – 1/2 Cup.
All purpose flour / Maida – 1 cup ( click to buy best quality)
Banana puree – 3/4 cup ( about 2 big bananas).
Sugar – 1/2 cup.
Vanilla essence -1 tsp.
Salt -a pinch.
Baking powder – 1 1/2 tsp
melted butter or oil – 1/2 cup.



METHOD : 
  1. Pre-heat oven to 170”C -30 mins.
  2. Sift all purpose flour , wheat flour , salt , baking powder together twice.
  3. Grind bananas to fine puree without adding water.
  4. In a bowl add sugar , melted butter or oil , vanilla and mix well till sugar dissolves.
  5. Then add banana puree and mix well.
  6. Now add dry flour mixture to the bowl and keep mixing.
  7. Mix well and fill the batter to a greased loaf pan and bake for 30 mins or till tooth pick comes out clean.
  8. Remove from oven and let the bread cool a bit , invert from pan and serve hot or cold as per your choice.
  9. Warm bread also tastes great , but you can store in airtight container and serve for 4 days too.
    NOTES :
    1) You can replace maida with whole wheat flour too.
  1. Melted butter can be replaced with oil also but I love the rich taste of butter.
  2. The batter will not be so thin like our regular cake batter it will be little thick like bread dough so don't worry , the final bread will be soft and yummy.
