PANEER JALFREZI

Hi,
PANEER JALFREZI..This is one of my paleo dinner which I make often . It is very colourful , tangy and spicy that goes very well with rotis , chapatis and even with dosa too.
After starting paleo diet ,Iam in need to explore many paneer recipes to keep me motivated without getting bored about diet.And this is one of my favorite dinner .This is dry version of Paneer Jalfrezi ,gravy version I have not tried yet will try sometime and post the recipe.

INGREDIENTS :
Paneer – 200 gms.
Onion – 1 no ( medium sized).
Ginger – 1/2” piece – 1 no.
Garlic – 5 pods.
Green capsicum – 1/2 no.
Red bell pepper – 1/2 no.
Yellow bell pepper – 1/2 no.
Carrot – 1 no ( medium sized).
Dry red chillies – 2 nos.
Tomatoes – 3 nos
Cumin – 1/2 tsp.
Butter – 2 tsp.
Kasori methi – 1 tsp.
Garam masala -1 tsp.
Turmeric powder – 1/4 tsp.
Chilli powder – 2 tsp.
Coriander powder – 1 tsp.
Lemon juice – 1 tsp.
Curry leaves – a sprig.

METHOD :
  1. Grind tomatoes to fine puree.Chop paneer to medium sized cubes.
  2. Slice onions , garlic , ginger , bell peppers ,carrot lengthwise.
  3. In pan heat 1 tsp butter and roast paneer in slow flame till slight brown.Remove and keep it aside till use.
  4. Heat balance butter to pan and add cumin , dry red chillies and saute for a minute .
  5. When cumin sizzles and dry red chillies turns brown ,add garlic ,ginger and saute till raw smell leaves.
  6. Now add onions , bell peppers , carrot and saute in high flame till vegs fries to soft.
  7. Then add turmeric powder , chilli powder , coriander powder and saute for a minute.
  8. Add tomato puree ,salt and boil till raw smell of tomato leaves and gravy thickens .
  9. Finally add fried paneer pieces , kasori methi , garam masala and boil till paneer absorbs the masala well and gravy becomes dry.
  10. Sqeeze lemon juice , chopped curry leaves and remove from flame.
  11. Serve hot with roti , chapati ,pulka and even for dosa.

WARM WATER CHAPATI / BEGINNER GUIDE FOR SOFT CHAPATI
