CARROT HALWA / GAJAR HALWA

Hi All,
It has been a year since I started food blog , and food blogging is one of the best thing I ever did.
Food blogging gives me some intense happiness and many times I don't get enough time to click and post recipe so its like always in hurry to do anything but still it gives me satisfaction.
So anniversary special recipe is CARROT HALWA recipe , My viewer friend Srividhya asked me for this carrot halwa recipe few days back , when checked all the ingredients were available with me so I tried immediately and halwa disaapeared also in a day 😄The halwa was so tasty and rich and we all loved it,Adding condensed milk is purely optional but I loved the taste of condensed milk with carrot and it added additional richness to sweet.
The tasty sweet recipe is as below,

SERVINGS : yields about 2 cups of halwa.
COOKING TIME : 20 mins.

INGREDIENTS :
Carrot – 1/4 kg.
Milk – 1 cup.
Sugar – 1/4 cup.
Condensed milk – 3 tsp ( optional)
Ghee – 5 tsp.
Cashews – 5 nos.
Raisins – 10 nos.
Cardamom – 3 nos.



METHOD :
  1. Boil milk and bring it to room temperature.Powder cardamom finely.
  2. Grate carrot in smaller blade ( carrot must be finely grated so use smallest blade to grate).
  3. Heat 1 tsp ghee in a wide pan and add cashews ,raisins and fry till golden brown .Remove them to a plate.
  4. In the same pan add 1 more tsp ghee and fry grated carrots . Fry in low flame till raw smell leaves and carrot changes to pale colour ( it will take about 5 mins).
  5. Now add milk and keep the flame in medium heat.Stir occasionally till carrot boils well milk evaporates completely.
  6. When milk dries and the carrot mixture reaches thick , dry consistency add condensed milk and mix for a minute.
  7. Then add sugar ,fried cashews ,raisins,cardamom powder and keep stirring .Sugar dissolves and again carrot becomes soggy , keep stirring and boiling.
  8. Keep boiling until the mixture becomes thick again .
  9. Finally add remaining ghee , give a quick mix and remove from flame.
  10. Serve hot or cold as per your choice . The halwa tastes amazing even after refrigeration so you can refrigerate even for a week and enjoy.
    NOTES :
  1. Use fresh carrot for better taste and flavour.
  2. If needed you can use orange food colour but I never prefer artificial colours so I avoided.
  3. Condensed milk is purely optional , you can even skip it (but adding condensed milk enhances halwa to very rich taste ) .In that case increase sugar to 1/2 cup.
  4. If you like ghee , you can increase the amount of ghee as per your wish.
  5. Make sure at every stage the carrot mixture evaporates the moisture completely , if carrot holds moisture then halwa will get spoiled quickly.
  6. Use fry bowl and dry spoon to get longer life.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
