MUTTON PATTIES GRAVY

Hi All,
MUTTON KHEEMA PATTIES GRAVY!! I made this Patties gravy few days back for lunch along with Mutton Briyani.As I want the Patties to be flour free and grain free , I made it with eggs and ground masala.
The Patties was so yummy and also very filling .I had it as Patties and my family had it as gravy along with Briyani.
The simple and easy recipe is as below,
RECIPE SOURCE : Archana's kitchen.
INGREDIENTS :
FOR GRAVY :
Onions – 1 no.
Ginger garlic paste – 1/2 tsp.
Chilli powder – 1 tsp.
Turmeric powder – 1/4 tsp.
Garam masala – 1/2 tsp.
Corinader powder – 1/2 tsp.
Pepper powder – 1/4 tsp.
Tomatoes – 3 nos ( medium sized).
Salt – as required.
Coriander leaves and mint leaves – few for garnishing.
Cumin – 1/2 tsp.
Coconut oil or refined oil – 1 tsp.

FOR PATTIES :
Minced mutton – 1/2 kg.
Chilli powder – 1 tsp.
Garam masala – 1/2 tsp.
Salt – as required.
Egg – 1 no.
Coconut oil or refined oil – 4 tsp.

TO GRIND :
Mint leaves – handful.
Almond or cashews – 3 nos.
Ginger – 1/2” piece – 1 no.
Garlic – 5 pods.
Green chillies – 3 nos.

METHOD :
  1. Grind mint leaves , almonds , ginger, garlic , green chillies to fine paste.
  2. Wash and clean minced meat and add above ground paste , salt , chilli powder , garam masala , egg and mix well.
  3. Heat tawa and spread few drops of oil , make small pattice from mutton mixture and place it on hot tawa .
  4. Keep the flame in low ,drizzle few drops if oil and close the pan.cook for 5 mins.
  5. Then turn the Patties to next side and cook for 10 more mins.
  6. Like wise turn each side for every 5 mins and cook closed.
  7. When Patties boiled crisp and turns brown on both sides remove from flame and keep it aside.
  8. Same way fry all Patties and keep them aside.
  9. The Patties itself tastes great that you can eat as it is , but also you can make it into gravy and enjoy.
FOR GRAVY :
  1. Heat oil in kadai and add cumin , followed by onions and saute till onions turns brown.
  2. Now ginger garlic paste , chilli powder , coriander powder , garam masala powder , turmeric powder and fry till ginger garlic fries well.
  3. Add chopped tomatoes and saute till mushy.
  4. Add 1/4 cup water , salt , coriander leaves , mint leaves and boil for a minute.
  5. When gravy reached required consistency gently add fried mutton Patties and mix slowly so that the masala covers the Patties .
  6. Remove from flame and serve immediately.
  7. I served with mutton briyani.The gravy goes well with fried rice too.

NOTE :
  1. You can serve the Patties alone without gravy too.
  2. Instead of adding chopped tomatoes , you can grind the tomatoes and add too.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
