BADAM COOKIES / ALMOND COOKIES

Hello Everyone,

Every weekend I use to bake something for weekend snacks and mostly it will be cookies .

COOKIES ... The name itself brings so much joy and baking cookies is more fun .
During baking the cookies aroma will fill the entire house :) its such a nice feel!!!

This week I baked Badam / Cashew cookies ,The recipe I got from yummytummyaarthi.com

Based on her recipe I just changed the ratios as per my taste and baked my sweet cookies.
Cookies are very easy to bake it is just like our chapathi dough preparation and once you bake your own cookies then you will never go to store brought ones .




Lets move to recipe,

YIELDS : About 25 medium sized cookies.

INGREDIENTS :

All purpose flour / Maida -   2 cups .
Sugar                                 -   1/2 cup.
Butter                                 -  1/2 cup ( at normal room temperature )
Vanilla essence                  -  1 tsp
Baking Powder                  -  1 tsp.
Badam                                -  1/4 cup
Cashew                               -  10 pcs ( optional)
Egg                                     -  1 no ( cold egg).




OUR COOKIE INGREDIENTS

METHOD :

1) Grind badam and cashews to fine powder.
2) Grind sugar to fine powder.

3) In a bowl add sugar powder, vanilla essence , butter and mix up well .


4) Once mixed up well add the cold egg and mix well.


5) Then add powdered cashew , badam to the mixture and stir up till mixed.


6) Finally add all purpose flour ,baking powder and mix well to form a mass round ( for mixing I used hand ).

7) The consistency will be like chapathi dough but little softer than that (as shown in picture).


8) Pre heat oven at 170" for 20 mins .
9) Grease your baking tray with little butter and arrange the tray with  small balls of the cookie dough and flatten it using spatula.Grade some badam and add it on the top of cookie dough.
10) Place the tray in oven and bake for 10 to 15 mins

I ADDED SOME GRADED BADAM ON TOP
11) Remove from oven once done and let the cookies cool completely.



NOTES :

1) Normally I wont add much sugar to cookies as I don't want the sweetness to dominate the actual flavor of cookies , but if your are sweet tooth you can add 1/4 cup of sugar extra.

2) Hot cookies are nice to smell and see but for eating it must be cooled at room temperature so that the taste will set in cookies , If you have patience eat your cookies at least one day after baking to give the actual flavor.

3) Normally I like soft cookies so I have made little denser balls ,  you can make thinner to bring little more crispier cookies.

4) Don't bake more than 20 mins else cookies will turn very harder .

      May be you have reduced the amount of butter.Increase the butter a little and try again.:))

  2. yummy cookies.... quick question..instead of buttering the tray can i use parchment paper? also can i increase the amount of almonds? TIA Mrs. Pillai

    1. yes dear..you can use prachement paper and also you can increase the amount of badam as you wish..higher the amount of badam better the taste.
