RASAGULLA / SWEETS


Hi All,

Most of us think  that some of  our favorite dishes and desserts are very complicated to make and we cannot make it in our home . But the fact is most of the exotic dishes are very easy to make and we can make them easily in home ,One of such dessert is RASAGULLA .

Earlier I was thinking that Rasagulla is such a sweet that are prepared by experts with some complicated ingredients , But once I tired in home I understand how easy it is to prepare and  home made Rasugullas are much more softer and tastier than store brought ones :) :)

So pls try it in home once and then you will become addict to it.

SERVINGS : 15 RASAGULLAS.

INGREDIENTS :

Paneer crumbled                             -    1/2 cup ( I used homemade panner , pls click for home made panner recipe ) .
Sugar                                               -   1 cup
Water                                               -   1 3/4 cups
Cardamon                                        -   2 nos
Rose water or Vanilla essence         -   1/2 tsp (optional).


METHOD :

1) In pressure cooker add sugar and water and heat it till the sugar melts , now peel the cardamons and add it to the sugar water and simmer the heat.


2) In a bowl knead your paneer with your hands for 10 to 15 mins  till it becomes soft dough.

3) Make small balls out from the dough ,roll the balls with your palm to make sure there are no cracks .If your balls leave crack then it means you didn't knead it well.

4) Add the balls one by one to the sugar syrup and close the cooker .Keep the flame in medium heat.


5) Leave cooker for 3 whistles and switchoff the stove , let the pressure subside by itself.


6) After heat subsides (after 20 mins ) open the cooker and you can find the rasagullas have doubled the size , now add few drops of rose water or vanilla essence.

7) Empty the rasagullas with sugar syrup to a bowl and let it cool by itself.


8) Serve in a bowl with garnishing as per your choice (you can add chopped pistachios or walnuts ).We love to eat as it is so I didn't garnish anything.

9) Try it and let me know how it turned it to you.

NOTES :

1) You can prepare in open pan method also . I will share that recipe soon.
2) Choose the pressure cooker wide enough as your rasagullas will expand to double the size after cooking.
3) Don't leave more than 3 whistles else you will get very chewy rasagullas.
4) Cardamon will remove the milk smell from the rasagullas so don't skip it .
   As we like the aroma of vanilla I added vanilla essence also so it is purely optional.
