PASTA / MACARONI FOR BREAKFAST / DINNER

Hi All,
Here in our home Idli and Dosa batter plays important role in Breakfast and Dinner , If idli batter gets empty then it is like a hectic day to think what to prepare for Breakfast and Dinner. To help such ladies like me here is such a yummy dish that is as easy as Idli and Dosa preparation and yet tastes different and spicy too.It is none other than Pasta and Macaroni!!
The basic ingredient in Pasta and Macaroni are same ,  only the shapes look different so we can cook pasta and Macaroni in same way.

 Lets jump into the recipe,
INGREDIENTS :
Macaroni                           –   2 cups
Onion                                –  1 (big)
Tomato                              –  1 (big)

Garlic                                 –   4 to 5 pods.

Dry red chillies                   –  3 nos

Tomato ketchup                 –  2 tsp

Soya sauce                       –  ½ tsp
Salt                                    –  as required
Oil                                      –  3 tsp
Water                                 –  4 cups
Coriander leaves                –  a bunch.

PREPARATION :
 1)  In a wide vessel add 4 cups of water ,tomato , red chillies , salt and 1 tsp of salt and boil till water reaches boiling temperature.
2)  Once water boiled add the macaroni and boil for 2 mins (or as per package instructions) and switch off the flame and close the vessel for 5 mins.Macaroni will be doubled in size after boiling.

3) When you cut a macaroni with a knife it must cut into two halfs easily but should retain its original shape like elastic ,this is the right consistency of boiled macaroni.

4)  Once you ensure the macaroni is boiled properly remove the tomato and chilli from the water and keep aside to cool.

5) Now drain the water completely and cool the macaroni with running cold water (this is done to stop macaroni from over boiling) and keep it aside to drain the water completely.

6)  In the mean time peel the skin of tomato and grind along with the red chillies to fine paste ( this is called blanching of tomatoes).

7)   In a pan heat 2 tsp of oil followed by onions and garlic and fry till onions turns translucent.

8)  Now add our tomato ,chilli paste to the pan and saute till the raw smell leaves and oil leaves the pan.

9) Add the macaroni to the pan and add tomato ketchup and soya sauce , salt ,coriander leaves and toss well .

10)   Once everything mixed well switch off the flame and serve hot.

NOTES :

1) Macaroni boiling consistency is very important ,don't boil too much which will turn the macaroni to paste :(.

2) If you have noodles mix / noodles powder you can sprinkle it over the macaroni finally along with coriander leaves but this is optional.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
