GARLIC RICE / POONDU SADHAM / LUNCH BOX RECIPE

Hi Everyone,

Sometimes in the early morning our alarm rings out to our ears and our hands just crawl to its head and beats it to stop, thinking just five more minutes to sleep , then suddenly we will wake up to see we slept for one hour more !! OMG !! then we will run to kitchen like athletics runner to prepare lunch and bfast..Isnt it??!!

I have came across this situation many times so I always have some easy quick yet healthy lunch box recipes in hand to save me in such embarrassing times.

Here is such an easy recipe POONDU RICE / GARLIC RICE.



INGREDIENTS :

Boiled rice                        -    1 cup.
Cumin /Zeera                    -   1/2 tsp.
Coconut oil or refined oil -    2 tsp.
Mustard                            -    1/2 tsp
Curry leaves                     -     few
Channa dal                       -     1/2 tsp
Urad dal                           -     1/2 tsp.
Salt                                   -     as required.

TO ROAST AND GRIND :
Garlic pods                      -       8 to 9 pods.
Dry red chillies                -       3 to 4 pcs
Coconut                           -       2 tsp





Roasting ingredients




PREPARATION :

1) Boil rice with required water and once boiled empty the rice to big bowl and plough it with fork.


2) In a pan add a tsp of coconut oil and add the roasting ingredients garlic , red chillies and coconut and fry till the garlic turns to slight brown , Then remove from flame and grind them to coarse powder.


3) In the same pan add 2 tsp of oil and when it gets heated add mustard when it splutters add cumin followed by channa dal , urad dal , curry leaves and switch off once everything gets sauted well.


4) Add the sauted ingredients and ground powder to the boiled rice ,add required salt and mix well and serve.


That's all!! Healthy yet easy lunch ready!!

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
