Everyday cooking menu is the biggest task for every women and sometimes I bang my head thinking what to do.
Elephant yam ( senaikizhanku) is one of the vegetable which is available all round the year and it contains abundance of vitamins which is good for children , Only thing which we need to take care is the handling of vegetable while cooking.Pls refer notes how to clean and chop this vegetable.
INGREDIENTS :
Elephant yam - 1/4 kg
Onions (big) - 1 no
Mustard - 1/2 tsp
Oil - for frying
Curry leaves - few
Coriander leaves - a bunch.
FOR GRINDING :
Onion (small ) - 9 pcs.
Ginger - 1" pc
Garlic - 5 to 6 pods
Cinnamon / pattai - 1" Pc
Cloves / krambu - 3 pcs.
Fennel seeds / Sombu - 1/2 tsp
Cumin / zeera - 1/2 tsp
Poppy seeds / khus khus - 1/2 tsp.
Coconut grated - 3 tsp.
Coriander powder - 1 tsp.
Dry red chillies - 3 nos.
PREPARATION :
1) Grind the grinding ingredients to fine paste.
2) Chop the elephant yam, onions to small pieces.
3) In a kadai add enough oil and fry the elephant yam pieces in oil till it turns its colour and looks crispy. Drain the oil and keep them aside.
4) In a pan add a tsp of oil and when oil gets heated add mustard followed by onions , curry leaves and ground masala along with enough salt.
5) As the ground masala are raw ingredients let the masala boil well till the raw smell leaves the pan.
6) When the masala is boiled add the fried elephant yam pieces and add a cup of water and let the gravy boil till the vegetable is cooked soft.
7) Garnish with coriander leaves and switch off.
8) This sidedish goes well with chapathi , dosa and also variety rices.
NOTES :
1) Cleaning Elephant yam : Apply 2 drops of oil in your hands and scrap the skin of elephant yam and chop the vegetable to small pieces.
2) During scrapping and chopping of yam don't touch your hands with water as it cause itching.
