PARUPU SADAM / DAL RICE!! Dal rice is my husband's favorite.He needs
dal rice atleast once in a week,Dals cooked along with rice ,topped
with ghee tates amazing.There are many versions in dal rice
cooking,My mum cooks dal rice in two ways – one with dominating
ground masala flavour and other with mild sauted spices.I prefer
second method always as it more easy to make.My mum makes with rice
and avara parupu but I prefer tur dal.
Today
Iam sharing second method with you , and first method will share
later.
SERVINGS : 2 members.
INGREDIENTS
:
Rice
– 1 cup.
Toor
dal – 1/4 cup.
Oil
– 1 tsp.
Ghee
– 2 tsp + 1 tsp .
Cinnamon
/ Pattai 1”piece - 1no.
Cloves
/ Krambu – 5 nos.
Zeera
/ Cumin – 1/2 tsp.
Garlic
– 4 nos.
Ginger
1” piece – 1 no.
Green
chillies – 3 nos.
Onions
– 1 no ( big).
Coconut
– 1/4 cup.
Turmeric
powder – 1/4 tsp.
Chilli
powder – 1/2 tsp.
Briyani
masala – 1 tsp ( optional).
Curry
leaves – a sprig.
Coriander
leaves – a bunch.
Salt
– as required.
Lemon
juice – 1 tsp.
METHOD
:
- Soak rice and tur dal with enough water for 15 mins.
- Chop onions, green chillies ,ginger ,garlic to small pieces.
- Heat oil and 2 tsp ghee in cooker , add our tempering ingredients ( cinnamon , cloves,zeera) and saute in low flame till aroma comes.
- Then add chopped chillies ,ginger,garlic,onions , curry leaves and saute till golden brown.
- Add coriander leaves and saute for a minute , followed by turmeric powder , chilli powder , briyani masala and fry for 30 seconds.
- Then add grated coconut and fry for one minute.Add soaked rice and dal , salt ,2 1/2 cup water.Close cooker and cook for 3 whistles.
- When pressure subsides open the cooker , add remaining 1 tsp ghee , lemon juice ,mix gently but evenly.
- Serve hot with raita or your favoite side dish.I served with raita and cheese egg.
NOTES
:
- Be generous in adding ghee.
- Add water enough to cook rice , No need to add extra water for tur dal .Tur dal will get cooked along with rice itself.HAPPY COOKING!!
