BACHELOR SAMBAR ( TIFFEN SAMBAR)

Hi All,
BACHELOR SAMBAR!! Name sounds funny right?! But really this sambar helps bachelors so much.
When I have only 20 mins left for cooking and when Iam in hurry , I will cook this sambar.It is so easy to make that you can make it in 20 mins and serve hot.The main advantage is only a cooker and small pan is all you need to cook the entire sambar.The sambar goes great with breakfast and dinner but ok with rice too.But I love to have with idli , dosa , vada , pongal etc..
You can also view my EASY SAMBAR recipe  which is my mother's way of making sambar.That sambar is more easier than this :).
I made this sambar during pongal to go with Pongal and Vada (Will post those recipes soon).
So due to hurry I was not able to click many photos..sorry.

The easy peasy recipe is as below,


SERVINGS : 4 members.

INGREDIENTS :
Tur dal – 1/2 cup.
Onions – 1 no ( big).
Green chillies – 3 nos.
Curry leaves – a sprig.
Cumin / Zeera – 1 tsp.
Turmeric powder – 1/4 tsp.
Tomatoes – 1 no ( medium sized)
Home made sambar powder – 1 1/2 tsp ( recipe link here).
Chilli powder – 1 tsp.
Ghee – 1 tsp.
Mustard – 1/4 tsp.
Coriander leaves – a bunch.
Tamarind – a pinch.
Salt – as required.
Jaggery or sugar - 1/2 tsp.
METHOD :
  1. Wash and soak tur dal in 1 cup of water for 10 mins.
  2. Soak tamarind in warm water for 10 mins , then extract the juice and discard pulp.
  3. Chop onions to big pieces , slit green chillies.
  4. Add tur dal along with water to a pressure cooker , chopped onions , curry leaves , cumin ,turmeric powder , sambar powder ,chilli powder , tomato , tamarind water , 1 1/2 cup water , salt ,jaggery and close the pan .Cook for 5 whistles.
  5. Once pressure subsides open the cooker and mash the sambar well with your ladle.
  6. In a small pan heat ghee , add mustard and when mustard splutters add it to boiled sambar and mix well.
  7. Garnish with coriander leaves and serve hot.
NOTES :
  1. Turdal must have boiled well to form silky gravy so cook for 5 or more whistles.
  2. You can saute sambar powder along with mustard and add , sauteing sambar powder separately will enhance flavour of sambar well.But due to lack of time I added everything in cooker and cooked.
  3. Instead of sauteing mustard separately you can saute it in cooker itself and add all other ingredients and boil for 5 whistles too ( this is more easier process).
  4. Dont replace ghee , it gives amazing flavour .Also be generous in adding coriander leaves.Ghee and coriander leaves are highlights in this sambar.
    5.You can also add any vegs of your choice.Add vegs also in cooker and cook along with tur dal.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
