NO BAKE HEALTHY CHOCOLATE ,COCONUT SWISS ROLL

Hi All,
Whenever I make cookies last few cookies always remains in box😖.Everyone expects me to make new snacks everyday and they don't want to eat the same snack each day.Even in Arun's office his friends demand new snacks everyday 😡!! If Arun takes same snack for two days everyone starts yelling😠..
So what to do with the leftover cookies😕..I want to make it into something healthy , yet exciting.Then I got this idea from youtube,I changed the recipe and ingredients as per my idea and made this healthy Swiss role.
This dessert is such a huge success that I husband asked me from which bakery I brought this cake(wooowwww)..
The recipe is so easy that everyone can make it for kids party and no one is going to find out the secret.
The secret recipe is as below,
INGREDIENTS :
Ghee biscuits – 10 nos ( recipe link here).
Honey – 3 tsp.
Butter – 2 tsp.
Chocolate sauce – 2 tsp ( recipe link here).
Cardamom – 2 nos.
Coconut ( grated) – 3/4 cup.
Milk – if required.

METHOD :
 
  1. Grind biscuits to fine powder .As my biscuits are pure ghee biscuits it oozed out ghee while grinding and became moist so I didn't add butter.
  2. If your biscuit has no moisture and looks dry, add 1 tsp butter and mix well.
  3. Add chocolate sauce and mix well to form a soft dough.
  4. In a cup add grated coconut , honey,cardamom powder,1 tsp butter and mix to form thick paste ( as in picture).
  5. Now place the biscuit dough in a parachment paper or poly bag and using your roller ,roll the dough to thick ,rectangular disc.
  6. Spread the coconut mix over the dough evenly.
  7. Roll the dough gently and tightly by lifting the poly bag slowly.Be slow in rolling the dough.
  8. Drizzle some chocolate sauce on the top as per your wish and refrigerate the roll for 4 to 5 hours or until firm.
  9. Once set remove from refrigerator,slice and enjoy.
NOTES :
  1. I used healthy home made biscuits , you can use Marie or any biscuit of your choice.
  2. Instead of home made chocolate sauce you can use instant chocolate sauce like Hershey chocolate sauce too ,or melted chocolate also(Add chopped chocolate in a bowl and place it in hot water to melt the chocolates ( home made chocolate recipe here)).
  3. Use fresh coconut to get juicy , yummy taste.
  4. Be gentle and slow in rolling the dough.
  5. Instead of honey use sugar too.As I want everything to be healthy I used honey.
