SIMPLE MUSHROOM GRAVY.

Hi All,
SIMPLE MUSHROOM GRAVY!! If you are a vegetarian then pls consume mushroom as much as possible as it contains lot of essential proteins.Though we are seriously non-vegetarians I cook mushroom once in a week.Whatever we cook with mushroom it tastes yummy so I always cook it with confidence 👍..
I make this curry when I have no time to look into my recipe book..It is so easy and you can make it in 20 mins.The curry goes very well with tiffens and also rice too.I served it with cauliflower tortillas(will share the recipe soon) ,you can serve with bread , rotis , dosa too.
The simple curry is as below,

INGREDIENTS :
Mushroom – 1 packet ( 200 gms).
Onions – 1 no ( big).
Curry leaves – a sprig.
Cumin / Zeera – 1/4 tsp.
Mustard – 1/8 tsp.
Capsicum – 1 no(optional)
Chilli powder – 1 tsp.
Coriander powder – 1 tsp.
Turmeric powder – 1/4 tsp.
Garam masala – 1 tsp.
Coriander leaves – a bunch
Salt – as required.
Oil – 1 tsp.

TO GRIND TO FINE PASTE:
Garlic – 8 pods.
Ginger – 1” piece – 2 no.
Onion – 1/2 no ( big).
Cinnamon – 1” piece – 1 no.
Cloves – 4 nos.
Fennel seeds / sombu – 1/2 tsp.
Cumin / Zeera – 1/2 tsp.
Roasted channa dal/Pottukadalai– 1 tsp.
Poppy seeds / khus khus – 1/4 tsp.
METHOD :
  1. Grind the grinding ingredients with little water to fine paste .
  2. Clean and slit mushroom in two or four pieces according to its size.
  3. Chop onions and capsicum to small pieces.
  4. In a wide kadai heat oil , followed by mustard and cumin .When cumin starts spluttering add onions , capsicum and curry leaves and saute till onions turns soft and golden brown.


  5. Now add ground masala and boil till raw smell leaves.
  6. Time to add our powders – add chilli powder , turmeric powder , coriander powder , garam masala powder and fry mix well for a minute till masala mixes well and forms thick paste.
  7. Then add slitted mushroom , salt and mix well in medium flame till the mushroom coats well in masala.

  8. If you are scared about burning bottom add 1/8 cup of water (as mushroom already contains water there is no need to add water ). close the pan and cook in medium flame for 10 mins till the mushroom cooks to soft.
  9. When reached required consistency ( thick gravy will tastes best) , garnish with coriander leaves and remove from heat.
  10. Serve hot with rotis ,dosas ,bread of your choice . I served with gobi tortillas.


    NOTES : 
    1) You can even skip capsicum , the gravy tastes great without capsicum too.
    2) Thick gravy tastes amazing but if needed you can make it like thin gravy too by adding little more water.
