SPICY PUMPKIN MUFFINS

Hi All,
I always wanted to make muffins spicy instead of sweet , As there is no sweet lovers in my home I have to eat most of sweets so thought of making spicy snacks.
I made this healthy pumpkin muffins only for me :) with no flour .When first time I made pumpkin muffins it was a flop , I didn't fry pumpkin properly so muffins got raw smell.
Then again I tried and got thumps up..
It is so easy and healthy too.
The recipe is as below,

INGREDIENTS :
Pumpkin chopped – 2 cups..
Grated Coconut – 1/2 cup.
Cinnamon 1” piece – 2 nos.
Cloves – 2 nos.
Nutmeg – peanut sized.
Baking powder – 1/2 tsp.
Baking soda – 1/4 tsp.
Salt – 1/2 tsp
Egg – 3 nos.
Chilli powder – 1 tsp.


METHOD : 
  1. Heat a wide pan and dry roast pumpkin till it cooks soft.Puree the cooked pumpkin.2 cups of chopped pumpkin will give you about 1 cup of puree.
  2. Powder cinnamon , cloves , nutmeg to fine powder.
  3. Dry roast coconut for a minute and grind it to powder.
  4. Mix all the dry ingredients well – coconut powder , spice powders , baking powder , baking soda , salt ,chilli powder.
  5. The add pumpkin puree and mix well,followed by eggs and mix everything together.


  6. Pre-heat oven to 180”C .
  7. Fill the muffin mixture in moulds and bake for 30 mins.
     
  8. Insert a knife to check clean and remove from oven.
  9. Enjoy hot , spicy muffins with your favorite chutney.
    NOTES : 
    1) Fry pumpkin till very soft , else you will end up with raw pumpkin smell muffins.
