I
always wanted to make muffins spicy instead of sweet , As there is no
sweet lovers in my home I have to eat most of sweets so thought of
making spicy snacks.
I
made this healthy pumpkin muffins only for me :) with no flour .When
first time I made pumpkin muffins it was a flop , I didn't fry
pumpkin properly so muffins got raw smell.
Then
again I tried and got thumps up..
The
recipe is as below,
INGREDIENTS
:
Pumpkin
chopped – 2 cups..
Grated
Coconut – 1/2 cup.
Cinnamon
1” piece – 2 nos.
Cloves
– 2 nos.
Nutmeg
– peanut sized.
Baking
powder – 1/2 tsp.
Baking
soda – 1/4 tsp.
Salt
– 1/2 tsp
Egg
– 3 nos.
Chilli
powder – 1 tsp.
- Powder cinnamon , cloves , nutmeg to fine powder.
- Pre-heat oven to 180”C .
- Enjoy hot , spicy muffins with your favorite chutney.
NOTES :
1) Fry pumpkin till very soft , else you will end up with raw pumpkin smell muffins.
