VEGETABLES STUFFED MUSHROOM CAPS

Hi All,
After starting diet my only problem is what to cook for me? What to cook for me?!
When I cook something spicy and yummy for my family ,I carve for spicy dish too.
Last week I made mushroom briyani for my family so what to cook for me!? So baked spicy ,yummy ,vegs mushroom caps.
The dish was very yummy and it really satisfied my spicy carving,also it was very filling.
The recipe is as below,

INGREDIENTS :
Mushroom – 200 gms ( 1 packet-11 pieces).
Tomato ketchup or pizza sauce – 2 tsp.
Mixed herbs – 2 tsp (optional).
Pepper powder – 1 tsp.
Salt – 1/2 tsp.
Butter or ghee – 1 tsp.
Pizza cheese – 5 tsp ( optional).

FOR STUFFING :
Sweet potato – 1 medium sized.
Onions – 1 no ( medium sized).
Tomatoes – 1 no ( medium sized).
Ginger – 1/2” piece – 1 no.
Garlic – 5 pods.
Capsicum – 1/2 no.
Curry leaves – 2 tsp.
Mint leaves – 1tsp.
Coriander leaves – 1 tsp.
Kasori methi – 1 tsp.
Cumin – 1 tsp.
Chilli powder – 1 tsp.
Coriander powder – 1/2 tsp.
Turmeric powder – 1/4 tsp.
Lemon juice – 1 tsp.
Salt – as required.
Butter – 1 tsp.


METHOD :
STUFFING :
  1. Peel sweet potato skin and chop it into small pieces and put them in salted water until use ( salt water prevents potato from changing its colour).
  2. Chop onions , ginger , garlic ,capsicum ,mint leaves ,curry leaves , coriander leaves to very small pieces.
    Heat butter in a wide kadai and add cumin , when cumin starts spluttering add garlic ,ginger and saute till dark brown.
  3. Then add onions , capsicum , curry leaves and fry well, followed by tomatoes and saute till mushy.
  4. Then add mushroom stems and chopped sweet potato ,fry for a minute.
    Add enough water , salt , chilli powder , coriander powder , turmeric powder and close the pan ,cook till the vegs cooked to soft and water evaporates completely.
  5. When gravy becomes dry , remove from flame and garnish with coriander leaves , squeeze lemon juice and mix well.Our stuffing is ready.
    MUSHROOMS :
  1. In a bowl add 1 tsp butter or ghee and add our herbs , kasori methi , pepper powder ,salt and mix well.
  2. Wash and clean mushrooms ,Remove stem(Stems you can add in stuffing) and cap of mushroom separately.
    Take each mushroom cap and swril in oil mixture till oil mixture coats the mushroom caps.Like wise coat all mushrooms.
  3. In your baking tray ,place each mushroom upside down and fill 1/8 tsp of tomato sauce inside the mushroom caps.
  4. Then fill with above veg mixture , give a slight press so that the mixture fills the mushroom well.

  5. Pre-heat your oven 200”C and bake the mushrooms for 30 mins or till it shrinks and turns brown.
  6. Remove from oven and sprinkle small amount of cheese over the mushrooms and bake for 30 seconds till the cheese melts.
  7. That's it!! Remove from oven and enjoy hot.

NOTES :
  1. Instead of sweet potato you can add any vegs of your choice.
  2. Cheese is optional , you can even avoid it.
  3. If your oven has bake & roast option , you can even cook in bake & roast mode.
