CAULIFLOWER VEGS KOTTU PAROTA ( NO FLOUR , ONLY VEGS)

Hi All,
Now Cauliflowers are cheap price in market,So eat many as you like.Recently Iam trying to follow some healthy food style ( every new year I take this resolution 😁 but lasts only for two months).
This time Iam very strict in following diet ( I think so! ) .I came across this healthy kotthu parota recipe in a diet blog , they made the parota with mixed vegs but I tried with cauliflower and the taste just came like our restaurant style kottu parota itself.
I had it for dinner and rest of my family had as sidedish for chapathi.

The below is the recipe,

INGREDIENTS :
Cauliflower – 1 cup.
Paneer – 1/2 cup.
Onions – 1 no ( big).
Green chillies – 2 nos.
Ginger – 1” piece – 1 no.
Garlic – 8 pods.
Fennel seeds / sombu – 1 tsp.
Cumin / Zeera – 1/2 tsp.
Poppy seeds / khus khus – 1/4 tsp.
Tomatoes – 1 no ( medium sized).
Curry leaves – a sprig.
Chilli powder – 1 tsp.
Coriander powder – 1 tsp.
Garam masala / chicken masala – 1 tsp.
Turmeric powder – 1/4 tsp.
Ghee or coconut oil – 2 tsp.
Egg – 1 no ( optional).
Coriander leaves – a bunch.
Lemon juice - 1/2 tsp ( optional).


METHOD :
  1. Boil 3 cups of water and when water reaches boiling temperature ,switch off the flame ,add cauliflower florets and close the pan for one minute . After one minute drain the water and rinse with cold water.Drain the water and keep it aside for 10 mins till the water completely drains.
  2. Grate the drained cauliflower florets to tiny bits ( you can even pulse in food processor to very coarse bits ) ,Grate paneer .Chop onions , tomatoes to small pieces.
  3. Grind ginger , garlic , fennel seeds , poppy seeds , green chillies to fine paste.
  4. In a wide pan heat 1 tsp of coconut oil or ghee and add grated panner , cauliflower bits and fry for 5 mins in medium flame ( or till they fried to little dry).
  5. Remove them to a plate and in the the same kadai heat 1 tsp if oil again and add cumin ,when cumin starts spluttering add chopped onions ,curry leaves and fry till translucent .
  6. Then add ground paste and saute till raw smell leaves , Now add our spice powders- turmeric powder , chilli powder ,salt , coriander powder and garam masala and fry for 2 mins.
  7. Add chopped tomatoes and fry till mushy.Finally add fried cauliflower and paneer and mix well.
  8. Add 1/8 cup of water and let the mixture boil till the flavour blends well and mixture turns dry.
  9. Garnish with chopped coriander leaves , add lemon juice , mix well and remove from flame and serve hot.
  10. If you are adding egg , add egg at this stage .Crack open a egg to the mixture , mix well till the egg is boiled and mixture becomes dry ,remove from flame and serve hot.
NOTES :
  1. You can add any vegs of your choice like carrot , cabbage ,radish of your choice.
  2. The kottu parota goes well with chapatis , dosa ,also you can have as it is too.
