RAGI DOSA / FINGER MILLET DOSA

Hi All,
RAGI DOSA.. Though I make ragi dosa often I never clicked pictures of it ( I always make it in hurry).Few days back I made ragi dosa exclusively to click and post. You can make many dishes with ragi but I make only dosa , as only through dosa form my family will eat it :(.
I don't make batter separately for any type of dosa . I will make dosa batter and with that I will mix any powder and ferment it for 5 hours and make dosa out of it,by this method we don't get bored of eating same dosa for whole week and also we no need to grind batter often.Once in a week it is enough if I grind batter and we can enjoy different varieties for whole week.
I make ragi sprouts powder in batches and store it ,whenever needed i will mix it up with dosa batter and make ragi dosa. You can also see the other sprouts recipes here.
The recipe for easy ,healthy ragi dosa is as below,

INGREDIENTS :
Dosa batter – 3 cups ( recipe link here)
Ragi powder – 1 cup ( recipe link here).
Salt – 1/2 tsp.
Water – as required.
Oil - few drops.

METHOD :
  1. In a bowl add dosa batter , ragi powder ,salt and mix well without lumps . Add water to make the batter thin.

  2. Let the batter rest for 5 hours for fermentation . If the dosa batter is unfermented then leave the batter for fermentation for 8 hours , if the dosa batter is already fermented then 5 hours rest is enough.
  3. Heat your iron skillet and spread few drops if oil , Pour a ladle full of batter over the iron skillet and spread it to even ,thin circle.
  4. Dizzle few drops of oil over the dosa and let the dosa boil in medium flame for 4 mins till the dosa turn light brown.
  5. Now flip the dosa to next side using your spatula and boil for 2 more mins.
  6. Remove from flame and serve hot with karachutney , peanut chutney or with your favorite sidedish.
    HAPPY COOKING!!

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
