All,
Having
soup in winters not only feels good but also very filling.I make this
soup as my lunch ,dinner and also for my daughters evening
snacks.Broccoli is very good for kids and we can feed them right from
10 months.But I started to feed Ashley only after 2 years ( as I thought Broccoli would be very bitter in taste 😕).
Broccoli and mushroom combined with egg tasted amazing and it is very easy
too.It is a very good winter food and good for kids.
The
recipe is as below,
INGREDIENTS
:
Broccoli – 1 medium sized ( about 2 cups florets).
Mushroom
– 200 gms ( 1 packet).
Garlic
– 10 pods.
Onions
– 1 no ( big).
Green
chillies – 2 nos.
Salt
– 1/2 tsp or as required.
Pepper
– 1 tsp.
Egg
– 1 no ( optional).
Water
– as required.
Coconut oil / ghee – 1 tsp.
Coconut oil / ghee – 1 tsp.
METHOD
:
- Cut broccoli to medium sized florets.Add florets to boiling water and leave for 1 minute.After 1 minute drain the water and allow running water over the broccoli once.Keep the florets in a strainer to drain the water completely.
- Chop onions lengthwise , slit chillies to two pieces ,chop garlic roughly.Clean,wash and cut mushroom to two or four pieces depending on its size.
- In a shallow vessel heat oil , add green chillies and saute for a minute .Then add onions , garlic and saute till onions turns slight brown.
- Add mushroom , broccoli ,salt , little water ,close the vessel and boil till the vegs cooked soft.
- Finally in a small cup crack open a egg and keep it in middle of boiling soup.After 5 mins you can see the eggs are boiled to stiff.Remove the egg cup and keep it aside to cool down.Then remove the egg from cup.
- Switch off the flame and mash the soup with ladle well to form even mixture.
- Pour the soup to a bowl , boiled egg , sprinkle pepper and serve .
- If you are feeding to kids , mash well when the soup is hot for even mashing.
- Add enough water during boiling , about 1/2 cup is enough for boiling.Adding more water and over boiling will kill the vitamins.
- Adding
egg is optional , you can even skip it.
