BELL PEPPER CHICKEN STIR FRY

Hi All,
BELL PEPPER CHICKEN STIR FRY!! Bell peppers when combined with chicken gives good taste and also good colour combination too...
I brought some bell peppers from super market few days back thought of making pizza but time doesn't permit me to bake pizza so I planned for this stir fry..
I served the curry with fried rice ,you can have it as it too.

The recipe is as below,
INGREDIENTS :
Chicken -1/2 kg.
Cumin – 1/2 tsp.
Green bell pepper – 1 no.
Yellow bell pepper – 1 no.
Red bell pepper – 1 no.
Onion – 1 no ( big)
Garam masala – 1/2 tsp.
Pepper powder – 1 tsp.
Salt – as required.
Coconut oil / ghee – 1 tsp.
Coriander leaves – 3 tsp.
Curry leaves – 1 tsp

TO GRIND TO PASTE:
Coconut – 1/4 cup.
Garlic – 10 pods.
Ginger 1” piece – 1 no.
Pepper – 1 tsp.
Turmeric powder – 1/4 tsp.

METHOD :
  1. Grind the grinding ingredients to fine paste. 
  2. Marinate chicken pieces with above paste , salt and let the marination rest for 30 mins.
  3. In the mean time , slice onions and bell peppers lengthwise(Julienne cut).
  4. After 30 mins , heat oil in a wide kadai and add cumin .When cumin starts spluttering add marinated chicken pieces and fry till the chicken changes its colour and tender cooked.
  5. Now add garam masala , sliced onions , bell peppers , pepper powder and add 1/4 cup of water if required ( if you fear about bottom burning add water ) , mix well.
  6. Close the pan and cook for 5 more mins till the bell peppers cooked to soft.
  7. Finally garnish with curry leaves , coriander leaves mix well , remove from flame and serve hot.
