EGG BRIYANI

EGG BRIYANI!! We like anything with the name Briyani..Few days back I decided to make egg briyani on sunday , but after making all prepaprations I noticed there is no Zeera samba rice , but still I was not ready to go back in our briyani decision . So made this briyani with normal rice itself.
The briyani was so simple yet tasted good.I served with Gobi nuggets .

The simple briyani recipe is as below,

INGREDIENTS :
Basmati rice or Zeera samba rice – 2 cups ( I used normal cooking rice).
Eggs – 7 nos.
Onions – 1 no ( big).
Tomatoes – 1 no ( big).
Bay leaf – 1 no.
Star anise – 2 nos.
Annachi mokku – 2 nos.
Black stone flower – 1/2 tsp.
Mace – 1 no.
Cinnamon – 3 nos.
Cardamom – 10 nos.
Oil – 3 tsp + 1 tsp .
Ghee – 3 tsp.
Salt – as required.
Briyani masala powder or Garam masala powder – 1 tsp.
Lemon juice – 1 tsp.
Chilli powder – 1 tsp.
Turmeric powder – 1/4 tsp.

TO GRIND TO FINE PASTE :
Green chillies – 4 nos
Garlic – 10 pods.
Ginger – 1” piece – 3 nos.
Coriander leaves – a bunch.
Mint leaves / Pudina – 1 bunch.



METHOD :
  1. Wash and soak the rice for 15 mins.
  2. Grind chillies, garlic , ginger , coriander leaves , mint leaves to fine paste.
  3. Slice onion lengthwise and chop tomatoes to small pieces.
  4. Boil eggs till hard , open the shells and marinate the eggs with chilli powder , garam masala powder , turmeric powder ,salt and let it rest for 5 mins.
  5. After 5 mins, in a wide pan add 1 tsp oil and add the eggs and fry till the masalas are roasted with eggs and turned dark brown.Remove from flame and keep it aside till use.

  6. Heat oil + 2 tsp ghee in your cooker , add the whole spices – Bay leaf , star anise , marati mokku , black stone flower , mace , cinnamaon , cardamom and saute in low flame.
  7. When the spices fried to brown and aroma arises , add chopped onions and fry till dark brown.

  8. Now add ground chilli paste and fry till raw smell leaves and oil separates.

  9. Add tomatoes and fry till mushy.
  10. Finally add washed rice , salt , fried eggs ,enough water and close the pan and cook for 3 whistles.
  11. When the pressure subsides open the cooker,transfer the briyani to a wide vessel and add 1 tsp ghee , lemon juice and give a gentle quick mix.
  12. Let the briyani rest for 10 more mins for the flavours to set.
  13. Serve with your favorite sidedish.I served with raita and Cauliflower nuggets.

NOTES :
  1. As I don't have basmati rice or zeera samba , I used normal cooking rice ,you can use basmati or zeera rice . In that case the water ratio will 1 cup rice : 1.5 cup water.

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai.One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible.
