GOBI
MANCHURIAN GRAVY!! I rarely make gobi manchurian gravy ,we prefer dry
version.
My
neighbour uncle was asking me about manchurian gravy recipe so made
this gravy to show him the preparation method.The gravy recipe is
also same like manchurian dry recipe but adding little flour with
cornflour makes the silky gravy.
I
made manchurian dosa with this gravy the gravy goes well with roti ,
fried rice too.
The
recipe is as below,
INGREDIENTS
:
Cauliflower
florets – 2 cups.
Salt
– 1/2 tsp.
Ginger,garlic
paste – 1 1/2 tsp.
Chilli
powder – 1 1/2 tsp.
Oil
– For deep frying.
FOR
BATTER :
Maida
/ All purpose flour – 1 1/2 cup.
Cornflour
mix – 6 tsp.
Chilli
powder – 2 tsp.
Salt
– 1/2 tsp.
Soya
sauce – 1 tsp.
Water
– as required.
FOR
GRAVY :
Onions
– 1 no ( big).
Garlic
( chopped) – 2 tsp(about 8 pods)
Ginger
( chopped) – 1/2 tsp.
Capsicum
– 1 no ( medium sized).
Coriander
leaves – a bunch.
Spring
onion ( chopped) – 2 tsp.
Soya
sauce – 1 tsp.
Tomato
sauce – 4 tsp.
Chilli
powder – 2 tsp.
Oil
– 3 tsp.
METHOD
:
- Boil 4 cups of water in a wide vessel , when water reached boiling temperature add cauliflower florets and boil for a minute.Remove from flame ,close the vessel and let it rest for 10 mins.
- Drain the water completely without any water .Then add salt , chilli powder , ginger garlic paste to cauliflower and marinate well , leave it for 20 mins.
- In a bowl add all purpose flour , cornflour mix , salt ,chilli powder , soya sauce , water and mix well to form dosa batter consistency.
- Heat oil in wide pan , take each cauliflower florets and dip in above flour batter , deep fry in oil , strain the oil and keep aside . Likewise deep fry all the florets ( Balance batter keep it aside as we are going to add the same to gravy)
- In a wide pan heat oil followed by garlic , ginger and fry till dark brown .
- Then add onions , Capsicum and saute till soft . Add soya sauce , tomato ketchup ,salt chilli powder , remaining flour batter ( batter that is left after dipping cauliflower,this is done to give gravy texture ) and boil for 2 mins till they mix well.
- Now add fried gobi pieces and toss well , garnish with onion grass , coriander leaves and serve hot.
NOTES
:
- To serve fresh and crisp always fry the cauliflower and add to gravy only before serving , so that the florets will not turn soft and mushy.
- If there is no batter left after frying the cauliflower , then you can mix 2 tsp of all purpose flour , 1 tsp of cornflour mix and add to the gravy . This method also will give you the same silky , gravy result.Also try Gobi Manchurian dry version with below link,HAPPY COOKING!!
