EGG MUFFINS WITH VEGS

Hi All,

So far I have never baked any healthy dish with my own recipe , whenever I want to try something healthy I will refer OMBC , pick a recipe , bake it that's all I did .Only today I got guts to make on my own . As we are egg lovers I was so confident whatever I make with egg my family will enjoy it. The final outcome was so soft , yummy and cheesy .
Happy to share the recipe with you too.

INGREDIENTS :
Egg – 3 nos.
Sooji / Rava – 1/8 cup.
Salt – as required.
Mozzarella Cheese – 5 tsp.
Carrot – 3 tsp ( chopped)
Beans – 2 tsp ( chopped)
Capsicum – 2 tsp ( chopped)
Coriander leaves – 1 tsp ( finely chopped).
Sesame seeds – 2/8 tsp.
Green chillies – 1 no ( chopped)
Tomatoes – 1 tsp ( chopped)
Onion grass – 1 tsp (chopped).
Pepper powder – 1/2 tsp.
Beetroot puree - 2 tsp ( optional – I added it to give appetizing colour).


METHOD :
  1. Dry roast sooji till aroma and keep it aside.
  2. Beat eggs till foamy.Add all the chopped vegs to egg ,salt ,pepper powder and mix well.


  3. Add roasted rava and mix too.
  4. Grease your muffin tray and pour the mixture till half ,sprinkle some sesame seeds on top.


  5. Pre-heat your oven at 170” C – 20 mins.
  6. Bake the muffins for 15 mins.
  7. Finally add grated cheese and bake for 1 more minute.
  8. Serve hot with ketchup or chutney of your choice.

NOTES :
  1. You can add any vegs of your choice.
  2. You can add any type of cheese , I added mozzarella cheese.
  3. Baking time may vary from oven to oven . So bake for 20 mins , insert knife and if comes out clean ,remove from oven.Else bake for 5 more mins.
    4) If you don't want to bake in oven , you can cook in closed vessel too.Pour the mixture in a cup and place it in boiling water ( without immersing) and boil for 20 mins.
