ORANGE PEEL CANDY..KIDS DELIGHT

Hi All,
Now it is season of oranges so make everything and anything possible with oranges.I got this idea for youtube video , but I was surprised how it tastes. So immediately I tried with orange peel and it was awesome .My daughter liked it so much. The recipe is as below,
INGREDIENTS :
Orange peel – 1 orange
Sugar – 1/2 cup.
Water – 1/2 cup.
Water – 2 cups ( for boiling orange peel).

METHOD :
  1. Peel the orange skin and clean the fibres from it.
  2. Slice it to thin stripes.
  3. Heat 2 cups of water in a wide vessel and add the sliced orange peel and boil for 5 mins.
  4. Remove from flame , drain the water and again boil in fresh water.
  5. Repeat the process 3 times ( this is done to remove the bitterness from orange peel).
  6. Now you can see the orange peel has turned transparent and glossy.
  7. Drain the water and let it rest for 5 mins until the sugar syrup is ready.
  8. In a wide vessel add sugar and water , boil till the sugar dissolves .Now add the boiled orange peel and boil till the water evaporates and orange peel absorbs the syrup completely.

  9. Remove from vessel and place in wired rack for 30 mins or more until the candy dries up.
  10. Now sprinkle sugar or powdered sugar and refrigerate for 30 mins.
  11. Remove from fridge and enjoy.

NOTES :
  1. You can use this candy in making cakes , just chop the Candy to small pieces and add to your fruits cake.
  2. If stored in airtight container the candy remains fresh for 1 week too .
     HAPPY COOKING!!

KADAMBA / KANAVA MASALA /SQUID FISH CURRY

Hi, Sea has lot of creatures in it that we can cook and we were much more unaware of many . Squid fish is one among the yummy species which I was totally unaware even after coming to Chennai. One day in market I saw them and surprised that they are selling octopus ( it looked like that to me :)). Then I surfed in net and found actually they are squid ( kadamba / kanava) and not octopus , My friend Saranya cooked this gravy for us during her visit to our home .I copied the recipe from her and tried next week itself.Though the squid fish looks very weird the taste was so yummy and there is no fish odor in that.It just tasted like mutton. The cleaning part is little tricky but easy, I suggest once you finished cleaning dispose the waste immediately out of your house as the waste from squid fish is very smelly and also it starts leaving water .So dispose the waste of squid as quick as possible. Other than that the fish tastes heaven , spicy, yummy and very easy to cook. I have
