MADURAI
STYLE KARI DOSA!! Iam always attracted to Madurai Cuisine . The
colour , aroma ,texture of Madurai foods are always awesome.I watched
this Kari dosa in a TV show.Though the chef refused to share the
recipe , the method of making kari dosa was quite interesting.I
immediately made veg version of kari dosa next day itself.And it took
so many months to try it with actual mutton kheema.The taste was so
good and very filling.
The
recipe is as below , pls do try it in home once and its worth a try,
SERVINGS
: 2 DOSAS.
INGREDIENTS
:
Mutton
Kheema masala – 1/2 cup ( recipe link here)
Thick Dosa
batter – 1 cup ( recipe link here).
Oil
– for drizzling.
Egg
– 2 nos.
METHOD
:
- Dosa batter must be thick like uttapam batter.Thin batter will not work here.
- Heat your iron skillet and spread 2 drops of oil evenly over the skillet.
- Pour the thick dosa batter on the skillet and spread it to thick circle like uttapam.
- Crack open a egg and pour over the dosa , using your spatula gently spread the egg.
- Now take 2 tablespoon of kheema masala and spread it on egg ( as in picture) .
- Press the kheema slightly using spatula as kheema to set with dosa well.
- Drizzle few drops of oil around the dosa and cook in low or in medium flame for 4 mins.
- Then gently turn the dosa to next side and boil for few more more mins.
- Remove from flame and enjoy hot.
NOTES
:
- Always boil in low or medium flame as the dosa will be very thick so it takes time to boil.
- While spreading egg and kheema ,dosa will lose its shape a little .Don't worry about perfect shape ,using your spatula just push the scattered batter to middle( this is how they done in TV show).
- Press kheema well over the dosa else turning dosa kheema will fall out.
